Veal Scaloppine

Serves: 2

Ingredients:

-2 veal scaloppine (5 oz each)
-4 slices prosciutto
-2 oz parmigiana cheese
-2 oz part-skim mozzarella cheese
-1 tbsp olive oil
-1 large package organic spinach
-salt and pepper
-1 tsp. lemon juice 
-dusting of flour

Directions:

Spray sauté pan with olive oil.  Begin heating pan. 
Preheat oven to 375.   
 While pan heats, dust veal scaloppine with  flour.  Season with salt and pepper.  Sear veal quickly, approximately 1 minute on each side. Set aside on a foil lined baking sheet.   Add spinach, lemon juice, and olive oil to your pan, and sauté until softened.  Tear prosciutto into small pieces.  Add to pan. Mix in a pinch of cheese.  Remove mixture from pan, and cover spinach.  Top with cheese.  Place in oven for 5-7 minutes, or until cheese is bubbly and melted.   
I like this served with a half of a  cooked spaghetti squash, which I like served hot, with a teaspoon of parmigiana cheese and lots of fresh pepper.
