Black Bean, Bison and Pepper Quesadillas

Serves: 2


Ingredients:​​
- 1 pound ground bison 
- 1 can black beans, rinsed and drained
- 1/4 cup shredded low fat cheese
- 1/4 cup fresh peppers (sweet or hot)
- 4 Skip the Sandwich wraps  

- I package frontera taco sauce 


Directions:

In a medium saucepan, brown ground bison.  Once fully cooked, add the frontera taco sauce packet.  Heat a large skillet over high heat. spray with cooking spray. Place on wrap on the skillet, and layer with a small portion of black beans, 2-3 oz of ground bison, 2 tablespoons of shredded low fat cheese, and fresh cut pepper.  Fold wrap in half, and press down with a spatula.  Cook for 2 minutes on each side. Makes 4 servings.  (You will have extra ground bison and extra black beans.)  
This is an easy make-ahead dinner. Simply cook the bison, stir in the sauce, and refrigerate for up to 5 days for a quick and easy after work dinner.  It tastes indulgent, but ground bison is low in fat, and skip the sandwich wraps are low carb and high in fiber.  All three of these links are from Target, but I bought all three items at Shoprite. They are also available at Wegmans or Stop and Shop as well.
