Asian Pork Lettuce Wraps

Serves: ~4

Ingredients for Meatballs:
-1 lb ground pork
-1 egg
-1 tbsp coconut flour
-1/2 lime, juiced
-2 teaspoons low sodium soy sauce
-1 clove garlic
-1 1/4" x 1 " slice ginger, minced and cubed
-dash salt
-4 ritz style crackers, crumbled

Peanut Sauce Ingredients:
-1/4 cup all natural chunky peanut butter
-2 tablespoons lime juice
-1/4 cup coconut milk 
-red pepper flakes  (to taste)
-low sodium soy sauce (to taste)
-1 head lettuce, large leaves washed and set aside. 


Combine all meatball ingredients in a small bowl. Mix. Shape into 24 mini meatballs.  Bake at 425 for 15 minutes.  While the meatballs cook, combine coconut milk, peanut butter, lime juice and red pepper flakes in a small pot of medium heat.  Stir to combine.  Add soy sauce and red pepper flakes to taste.  
Cook to desired thickness (about 2-3 minutes at a simmer).  Remove from heat and set aside.  In a medium bowl, combine cooked meatballs and sauce. Garnish with shredded veggies of your choice.  I used broccoli- it was what I had in the house! Eat immediately or store meatballs and lettuce in two tight containers in the refrigerator for up to 2 days.
