Apple Tart with Oatmeal and Almond Crust

Serves: 6

-3 granny smith apples, peeled and sliced
-1 lemon, juiced
-3 tablespoons maple syrup
-1 1/2 cups rolled oats (or 1 cup oat flour- if you can't find it, instructions on how to make it are below)
-1 1/4 cup almond flour
-3 tablespoons coconut oil
-1 tablespoon plus one teaspoon butter
-Dash cinnamon
-Dash salt
-Optional: 2 teaspoons agave nectar

Grease pan with butter, coconut oil, or nonstick cooking spray.  In a small bowl, combine almond flour, melted coconut oil, most of the butter. Mix together until it forms a crumbly dough.  Press into pan, using your finger tips. Dust lightly with a dash of salt. Bake tart at 350 degrees for 25 minutes. Remove from oven and let cool slightly.  
Peel apples. Remove cores. Slice finely. Place sliced apples in a bowl.  Mix with lemon juice and maple syrup.  Arrange apples in tart pans.  Sprinkle with cinnamon.  Drizzle with remaining maple syrup and lemon from the bowl.  Top with remaining butter. Bake tart for 30 minutes.  If you would like, in the final stages brush tart with agave nectar sprinkle with additional cinnamon.  

To make oat flour:
Place raw rolled oats in a food processor or vitamix. Pulse or blend until a fine flour forms.   This takes less than 2 minutes.
